Instant Pot Red Pepper Soup Tips and Tricks
- Blender (affiliate) tip: If you don't have an immersion blender (affiliate), you can still make this recipe with a minor adjustment. Instead of blending your soup with the handheld blender (affiliate), ladle the soup into a normal countertop blender (affiliate) until the blender (affiliate) is about ⅔ full. Remove the plastic insert from the lid to allow steam to escape and run until smooth. Return to the pot and continue working in batches until the soup is smooth.
- Buying tip: We opt for canned red peppers here over fresh ones, and I find that's best for flavor. Canned red peppers these days are preserved at peak freshness, and peak tastiness.
- Low carb tip: If you're looking for a low carb option, you can modify this recipe to use without the potato. Simply complete the steps as is (minute the potato) and cook it on high pressure for 4 minutes. While the pressure is releasing, mix together 3 Tbsp cornstarch and 2 Tbsp cold water to make a slurry. Open and blend everything together, then pour your slurry in. Set Instant Pot (affiliate) to Saute: More and simmer while stirring until desired thickness is reached.
- Cheese Tip: I like to buy my smoked gouda cheese in blocks and grate it only when I need it. To keep it from clumping when it's added to the soup, I simply toss the grated cheese with a pinch of all-purpose flour before adding it to the pot.

How to use an Instant Pot
Before you start this recipe, make sure you are familiar with the instructions and safety manual for your model of Instant Pot (or other pressure cooker). Instant Pot itself offers a nice set of videos on How to use an Instant Pot.
While pressure cookers are awesome tools, they have to be used correctly. Take the time to be familiar with how to use yours before you begin to avoid injury and give you the tastiest results.
What you need to make this recipe
Equipment wise, you'll want an Instant Pot (affiliate) or similiar electric pressure cooker. Aside from a chef's knife to prep, you'll also want a solid handheld immersion blender (affiliate) to bring everything together. If you do not have an immersion blender, you can use a standard countertop blender (affiliate), it just takes a little more work (as explained in Tips and Tricks above).
As for ingredients, you'll want:
- 2 Tbsp butter
- 4 cloves garlic, thinly sliced
- 1 cup celery, coarsely chopped
- 1 cup white onion, coarsely chopped
- 1 cup carrots, coarsely chopped
- 1 Tbsp dried oregano
- salt and pepper, to taste
- 1 cup white wine
- 1 russet potato, peeled and cut into ½ inch cubes
- 2 12oz jars, roasted red peppers
- 2.5 cups vegetable broth
- 6 oz smoked gouda cheese, shredded
- 0.5 cup half and half
How to make Instant Pot Red Pepper Soup with Smoked Gouda
Step 1: Turn Instant Pot (affiliate) on Saute: More. When display reads "Hot" add butter. Allow to melt, then add in sliced garlic cloves. Cook until brown, stirring and flipping as you cook.
Step 2: Add in chopped celery, onions and carrots. Cook about 2 minutes, then season with dried oregano and a pinch of salt and pepper. Stir everything together and cook 2 minutes more.
Step 3: Add in white wine and scrape up any brown bits on the bottom of the pan. Simmer 1 minute to cook off any alcohol. Add in potato, roasted red peppers and vegetable broth. Close lid and set valve to sealing. Set Instant Pot to Manual: High for 7 minutes.
Step 4: When timer goes off, perform a quick release, covering the valve with a towel to keep soup from spraying everywhere. When indicator lid has gone down, open lid. Use an immersion blender (affiliate) and blend until smooth.
Step 5: Add in smoked gouda cheese and half and half. Stir together until well blended. Serve immediately and enjoy!

Ingredients
- 2 Tbsp butter

Add in cubed russet potato, roasted red peppers and vegetable broth. Close lid and make sure vent is set to "sealing". Set Instant Pot to Manual: High for 7 minutes.
- When timer goes off, perform a quick release by flipping the valve to venting. [Note: cover the vent with a towel to help soup from releasing everywhere.] When pressure has fully released, carefully open lid.
- Using an immersion blender (affiliate), blend soup until smooth. Add in shredded smoked gouda cheese and half and half and stir in until well blended. Spoon into bowls and serve immediately.
